Mickey Pumpkin Donut Recipe

For Disney fans, there’s nothing more iconic during Halloween than the giant jack-o-lantern Mickey Mouse Pumpkin on Main Street.  Bring this spirit of the season home with homemade Mickey Pumpkin Donuts.

The great Mickey Pumpkin on Main Street is a must photo op when we visit the Disneyland Resort during HalloweenTime.  The gigantic beaming face welcomes guests to the Halloween season.  If you haven’t attended during the fall, the weather’s lovely and the treats are in abundant supply.

 

We love bringing the magic of the Disney parks home, especially to our kitchen.  To celebrate the upcoming holiday at the Disneyland Resort, today I’m sharing Mickey Pumpkin Donuts.  This recipe will make all Mickey Mouse fans shout “Oh Boy!”  When you consider how simple it is to make them, you might even respond with a “Hot Diggity Dog!”  Thankfully that’s all of the Mickey Mouse catch phrases I can think of, so we can move on to the recipe.

 

 

To make Mickey Pumpkin Donuts, you will start by baking vanilla donuts.  They’re healthier than fried donuts, and as easy to whip up as any cookie or cake.  I won’t tell if you opt to pick up pre-made ones at the store.  After baking your donuts, you’ll add icing to cover and decorate them.

 

Mickey Pumpkin Donuts Recipe

Makes 15 donuts
Donut Ingredients:
  • 1 C flour
  • 1/3 C sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp unsalted sweet cream butter, melted
  • 1 large egg
  • 1/3 C + 1 1/2 tbsp whole milk
  • 1 tsp pure vanilla extract
Directions :
Preheat your oven to 350 degrees.

 

Prepare your baking pan by spraying with Pam baking spray.In a large bowl, whisk together the flour, sugar, baking powder, and salt.

 

In a small bowl, whisk together egg, milk, butter, and vanilla extract.

 

Combine the wet ingredients with the dry ingredients and mix until well combined.Spoon batter into doughnut pan and bake for 10 minutes.  The donut should spring back when touched.

 

 

Remove from oven and allow to cool for 6 minutes before removing and placing the donuts onto a wire rack.

 

Vanilla Icing Ingredients:
  • 4 C powdered sugar
  • 1 tbsp clear corn syrup
  • 1/2 C whole milk
  • 1 tsp clear vanilla extract
  • Orange, yellow, and green gel food colorings
  • 3 disposable piping bags

 

Icing Directions:

Using a standing mixer, combine the powdered sugar, corn syrup, milk, and vanilla extract.  Mix on medium to high speed until smooth and thick.

 

Scoop about 1/4 C of the icing into 2 bowls.  In one bowl, add a few drops of green food coloring.

 

In the remaining bowl, add yellow food coloring to the icing.  Once mixed, scoop the icing colors into separate piping bags.

 

Add a few drops of the orange gel food coloring into the remaining white icing and mix.  You’ll need around 5 tablespoons.  Scoop the orange icing into the remaining piping bag.

 

You will have icing leftover.
Decorating ingredients:

How to Decorate Mickey Pumpkin Donuts:

Cut slits into the top corners of the doughnut for Mickey’s ears using a sharp knife.  If baking with children, you’ll want to do this step for them.

 

Place an orange candy melt into each of the slits for Mickey’s ears.  We’ve got ears!  Last Mickey quote, I promise.

 

Place donuts onto a wire rack and carefully pour the remaining orange icing onto the donuts. I recommend putting a tray underneath your wire rack to catch the icing that runs off of the donuts.

 

Allow the donuts to dry for about 30 minutes.  While waiting, you can cut your Fun Dip sticks into thirds.  You really want the rounded end pieces, so you can reserve the middle pieces for late night sugar rushes after the kids have gone to bed.

 

Carefully push the Fun Dip stick piece into the top center of the donut in between the ears.  Using your green piping bag, cover the stick with green icing until completely coated.  This will need to dry, so plan your Halloween costumes while you wait.

 

Once dry, use the same green piping bag to pipe 3 lines onto the “stem.”

 

Next, take the orange piping bag and pipe the details of the pumpkin onto the donuts.  A straight line down the center is a great place to start. Then pipe rounded lines from top to bottom.  Set the donuts aside to dry as you work through all of your donuts.

 

Using the yellow piping bag, pipe the 3 dots onto the doughnuts for the eyes and mouth.

 

The best part of all is sharing these with people you love.  It makes me so happy to think back at Halloweens past with my little Anna, Elsa, and Olaf too!  These happy Mickey Pumpkin Donuts usher in the memories of cooler temperatures, costumed characters, and devilishly good times–all the best parts of Halloween!
