In reply to Beth Davidson. It's really easy to swap out the fortunes. Microwave the cookies in small batches wrapped in a damp paper towel. I typically do short spurts (20 seconds a time) until I figure out just the right time. Once softened, swap out the fortune & reform. You have to work briskly because they do harden quickly, which is why I recommend doing just a few at a time.
