All thoughts and opinions are my own.

There are certain recipes I need each year to make it feel like the holidays.  The most delicious fudge that takes hours of stirring; my aunt Betsy’s mint chocolate brownies with their layers of chocolate, mint, and perhaps heaven.  Each year I know that I need the traditional favorites, but I also love to add in new treats to the mix.

Holiday Thumbprint Cookies are a fun twist on a traditional favorite cookie.  They're perfect for a cookie exchange this holiday season!

 

These Holiday Thumbprint Cookies are going to be your new favorite cookie!

You may have had the peanut butter blossom cookies before.  The yummy peanut butter cookie is rolled in sugar.  Once baked, a Hershey Kiss is added to the top.  The peanut butter/chocolate combo is to die for.  Let’s mix it up this holiday season by combining these traditional blossom cookies with some hints of red velvet goodness.

Holiday Thumbprint Cookies

Ingredients
Instructions
  1. Preheat oven to 350 degrees. Line cookie sheet with parchment paper.
  2. Beat butter, peanut butter, and sugar in a stand mixer until well combined and smooth.
  3. Add egg, vanilla, milk, and red food coloring. Beat on low
  4. In a separate bowl, combine dry ingredients (cocoa, flour, baking soda, and salt).
  5. Gradually add flour combination to your mixer, and beat until well combined.
  6. Now that your dough is prepared, form small balls. An ice cream scoop is a great tool to help form balls, if needed.
  7. Place white sprinkles into a bowl. Roll formed dough balls into sprinkles and place on your prepared parchment-lined baking sheet around 2 inches apart.
  8. Bake for 8-10 minutes. While cookies are baking, unwrap your Hershey Kisses.
  9. Once cookies are done baking, immediately place an unwrapped kiss in the center of each cookie. Let cool.

One of the things I love most about these cookies is that there’s something for everyone.  My peanut butter lovers are happy; my chocolate lovers are happy.  Plus, having a job for each of my three daughters is a huge win too.  You would be surprised that they are all actively looking for jobs, but when it comes to baking they all want to get their hands dirty (literally and figuratively).

Unwrapping the Hershey Kisses is  great job for my preschooler.  She also is very good at “poison testing” to make sure the kisses are suitable.  The peppermint bark flavor is like a chocolatey cane cane.  The red and white striping of the kisses is perfectly matched to the red cookies and white sprinkles.  If you can’t find them in your local store, feel free to swap in any flavor of kiss that you adore.

Did I only children so I could share my love of all things Harry Potter with others? No, but it is such an amazing part of being a mom!  I tell my girls about waiting at midnight for books to be released and then calling in sick the next day because I had to stay home and read.  Thankfully, my girls have all fallen in love with the series so now it’s a full family affair.

For her birthday last year, we headed to Universal Studios Hollywood so that she could experience all of the magic of the Wizarding World of Harry Potter.  It totally lived up to the hype for us!  Every detail is so perfect.  And, they had butterbeer ice cream!

Maple Butterscotch Cookies

With completion of each book for my 9-year-old muggle, we try to make something special.  Like being a Potterhead is a secret club and after each book she’s further indoctrinated.  These Maple Butterbeer Cookies are a sweet way to celebrate any occasion.

Harry Potter fans know that butterbeer is the beverage of choice for many-a wizard.  We have made a DIY version of the beverage using cream soda and vanilla ice cream, with butterscotch mixed in for good measure.  These cookies are a serious upgrade to that flavor with a few butter-rific flavors mixed in.

If you have used vanilla extract in your baking, the two extracts for this recipe are similar.  You’ll use butterscotch extract (similar to this) and butter extract (similar to this).  With maple syrup mixed into the batter and drizzled on top, it’s a seriously yummy way to transport your taste buds to Hogsmeade.

If you’re more subtle in your love for HP, these cookies would also make a great fall-themed treat.  Now all you have to do is say, “Accio Cookie!” and follow the recipe below.

“What should happen if you forget about me?” Pooh asks of his pal, Christopher Robin.

“Silly ol’ bear. I won’t ever forget about you, Pooh.  I promise.  Not even when I’m a hundred,” Christopher Robin replies.

For so many of us, we will never forget Winnie the Pooh, or his gloomy friend Eeyore or bouncy pal Tigger.  But in the upcoming Disney Studios release of Christopher Robin, Christopher Robin has grown up.  Will his stuffed pals from his childhood pals remember who he was?

I’ve been having so much fun with baked treats celebrating the silly ol’ bear.  My kids are also loving all the attention on Winnie the Pooh also.  In addition to enough treats to even bring a smile to Eeyore’s face, there are these adorable coloring pages and activity sheets available for free download.  Grab character coloring pages, plus adorable scenes from the movie.   There’s no one cuter to get lost in London with than Piglet, Tigger, Eeyore, and Pooh.

If you’ve never decorated sugar cookies with icing and thought it was going to require years of baking expertise, I’m here to tell you that you can absolutely do this.  These Winnie the Pooh cookies are the perfect way to start.  A solid golden yellow background and a few black piping details is all it takes to bring Winnie the Pooh to your cookie jar.

Winnie the Pooh Sugar Cookies

Ingredients: 

  • 1 C of unsalted sweet cream butter, softened
  • 1 1/2 C Powder sugar
  • 1 tsp vanilla
  • 1 egg
  • 3 C of flour
  • 1 tsp baking soda
  • 1 tsp cream of tarter
  • Cookie Cutter: Winnie the pooh shaped cookie cutter

Icing ingredients:

  • 4 egg whites
  • 1/2 tsp cream of tarter
  • 1/2 tsp vanilla
  • 4 1/2 C powder sugar
  • Golden Yellow and Black gel food coloring
  • 2 disposable piping bags fitted with a number 2 tip
  • 1 squeeze bottles

Directions:

Preheat oven to 350 degrees.

Cover a cookie sheet with parchment paper and set aside.

Using a standing mixer, cream together the butter, powder sugar, vanilla and egg and mix until combined and creamy.

Using a large bowl, combined the flour, baking soda, and cream of tarter.

Gradually add in the dry ingredients and mix on low speed.  Using your hands continue to mix until fully combined.

The next step is rolling out your sugar cookie dough to cut your Winnie the Pooh shapes. Lightly flour a cutting board and knead the cookie dough a couple of times.  Roll out the dough to about 1/2 inch thick.  Cut out 12 pooh faces using your cookie cutter and place onto a cookie sheet.

Bake for 8 minutes or until lightly golden brown.

Repeat steps until completely out of dough.

Let cookies cool completely.

Royal Icing Directions:

Using the standing mixer, combine the egg whites, cream of tarter, vanilla and powder sugar and mix until combined and stiff peaks form.

Split the icing into 2 bowls.

Add in a few drops of the golden yellow gel color into one bowl and mix until combined.  Add in a few drops of the black gel color into the second bowl and mix until combined. Scoop some of the icing into the icing bags; you should still have some of the icing available.  You’ll be using the icing in both piping bags and in squeeze bottles.   The piping bags will outline and the icing in the squeeze bottle will fill in the face.

To make the icing a little thinner so it’ll easily fill, add in a few tablespoons of water into the remaining golden yellow icing and mix until combined.  Pour the golden yellow icing into the squeeze bottle. 

Fill in the Pooh face with the thinned icing from your squeeze bottle.  Tap the cookie gently to remove any bubbles.  Let the cookie dry overnight.

Once it’s completely dry, it’s time to add the facial features using black icing.  This cookie has the face outlined in black, plus all of Winnie the Pooh’s face in black.  I would keep a picture of Pooh’s face nearby to reference.

To make Pooh’s face, I think about stretched out rainbows, rounded triangles, and two circle eyes.

To celebrate our favorite supers exploding back on the screen, I’ve got a fun treat to share!  Incredibles 2 Cookie Cups are a sweet way to celebrate Disney’s Incredibles 2 coming to theaters June 15!

It’s finally time!  The Parr family is back on the big screen as we catch up with the incredible family of supers who have been living under the radar.  In Incredibles 2, we find that being a superhero are still illegal.  It’s up to Helen Parr aka Elastigirl (voiced by Holly Hunter) to rebuild the superhero reputation while Bob Parr aka Mr. Incredible (voiced by Craig T. Nelson) to manage the home in the heroics of everyday parenting.  A mama who’s balancing mom life and work? That’s something we have in common.  Something else we have in commmon: no capes.

I’m so excited for Edna Mode!  I’m also thrilled to see Violet (voiced by Sarah Vowell), Dash (voiced by Huck Milner), and baby Jack-Jack.  At the end of Incredibles 1, we saw that baby Jack-Jack is developing his powers.  I can’t wait to see all he can do.  We know that supers can do even more when they’re together, so it’s no surprise Frozone (voiced by Samuel L. Jackson) is back in the sequel.

Last week I shared Incredibles 2 Coloring Pages and Activity SheetsThey are perfect for your little hero to keep busy this summer.  My littles are anxiously awaiting the release of the sequel of one of their favorite Disney/Pixar films.  With action and heart, the Incredibles are a family worth rooting for.

In this house we show our excitement through our oven.  These Incredibles 2 Cookie Cups are a great recipe to make in anticipation of the film’s release or serving at an Incredibles themed party.

Incredibles 2 Inspired Cookie Cups

 

Incredibles 2 Cookie Cups Recipe

Ingredients:

  • 1 box of French vanilla cake mix
  • 1/3 C canola oil
  • 2 large eggs
  • Red, yellow, and orange gel food coloring
  • 1 container of Yellow sanding sugar
  • Pam baking spray
  • Sprinkles

Tools Needed:

  • Mini cupcake pan
  • Mini ice cream scooper

How to Make Incredible Cookie Cups:

Preheat oven at 350º F.

Spray the cupcake pan with baking spray and set aside.

Using a standing mixer, combine cake mix, vegetable oil, and 2 eggs until combined.

Divide the batter into three separate bowls.

Mix red food coloring into one bowl.  Mix yellow food coloring into the second bowl, and orange food coloring into the third bowl.

Take about 1 teaspoon of each color of dough and form into tablespoon sized balls. Roll in yellow sanding sugar.

Place cookie dough balls into the cupcake pan.

Bake for 7 to 8 minutes.

Once the cookies come out of the oven, press down the back of 1 tbsp into the cookies to make an indent for the frosting.

Allow cookies to completely cool.

Frosting Ingredients:

  • 1 C unsalted sweet cream butter, softened
  • 2 1/2 C powder sugar
  • 1 tsp vanilla
  • 3-5 TBSP heavy whipping cream
  • 1 disposable piping bag with a star tip

How to Make Frosting:

Using a stand mixer, combine all ingredients and mix on medium speed.

Mix until stiffed peaks appear in frosting.

Scoop the frosting into the piping bags.

To decorate cookies, pipe the frosting into the indent of the cookies. Sprinkle with assorted sprinkles and black sanding sugar.  We opted to use red, yellow, and orange cake sprinkles like these  and star sprinkles similar to these.  Enjoy!
