Sheet Pan Vegetable Hash with Eggs {Recipe}

Some observations from my kitchen this month:

  • My children are hobbits. Not only do they eat three meals a day, they require things like “First Breakfast” and then “Second Breakfast.”
  • I am officially a short order cook. In a family with some vegetarians and some carnivores, I am accustomed to making meals that incorporate multiple main entrees. But we’ve delved into a world of individual meals, customized to everyone’s preferences that I need to rein in.
  • I’m out of dinner ideas. Officially out! I’ve made all the meals that everyone will eat without complaining (for the record, there are like three). I’ve made all the wholesome meals that I know are nutrious and thus worth the grumbles. But there I stand each night, baffled by the smorgasboard of ingredients.

Maybe you’ve seen a similar version of this meme floating around the internet. Its popularity comes from its universality.

This recipe by Patricia Bannan, MS, RDN for Smart & Final is so simple and a perfect way to mix fresh produce and frozen foods from your freezer.

Now onto the yummy recipe!

Sheet Pan Vegetable Hash with Eggs Recipe

Ingredients:

  • 1 pound baby yellow potatoes, halved
  • 2 ½ tablespoons Sun Harvest Extra-Virgin Olive Oil*
  • ½ teaspoon sea salt
  • ½ large red onion, chopped
  • 2 cups First Street Frozen Broccoli Florets*
  • ½ small head cauliflower, chopped into florets
  • 2 cups First Street Frozen Pepper Strips*
  • 1 cup First Street Frozen Chopped Spinach*
  • 6 large Sun Harvest Cage Free Eggs*
  • ½ teaspoon freshly ground black pepper
  • ½ large avocado, sliced
  • ½ cup fresh cilantro, chopped

Directions:

Preheat the oven to 425°F. Add the halved potatoes and chopped red onion to a rimmed baking sheet, drizzle with 1 tablespoon olive oil, season with ¼ teaspoon salt, and spread potatoes cut-side down in an even layer on the sheet pan. Roast until golden on the edges, about 20-25 minutes. 

Remove the sheet pan from the oven, and add the broccoli, cauliflower, and pepper strips. Drizzle with 1 ½ tablespoons olive oil and season with ¼ teaspoon of salt. Return pan to the oven and bake for about 5 minutes. 

Remove sheet pan once again, and mix in spinach. Make 6 small wells in the hash with the back of a spoon. Crack an egg into each well and bake until whites are just set, about 5 to 7 minutes. Season eggs with salt and pepper, top with sliced avocado and fresh cilantro, and serve immediately.  

I love meals like this one because it’s everything all in one. One pan, one meal, one really happy family. Everyone’s favorite veggies are included, and it’s super deliciously filling.

  • That sheet pan of veggies and eggs looks so good. Dinner is so important and it is not unusual for a person in the family to ask me at 11 o’clock what are we having for dinner.

  • I agree that the hardest part is finding dinner ideas for every night. It’s been a challenge finding things the entire family enjoys. The hash looks delicious.

    • Looks a lot of going on in that sheet meal. Really healthy and yum! I am actually one of those people who have a second breakfast too like your kids lol. I just eat whatever on the fridge. Maybe I’ll try this one too because I love eggs.
